Lentil Salad

This Lentil Salad recipe is super easy/delicious/nutritious/ruling for the summer. You can make up a giant batch on sunday and eat it for breakfast or lunch or a snack (dinner?) all week on toast or with pre-packed mixed field greens.

i love lentils. and have ridiculously been subsisting on a variety of lara bars these days. i think i will do it seriously. and then bring some over for hangout t shirt making time.

I made it one time. The flavor was completely O-M-G. Next time I will double the amount of lentils, though, b/c the texture was altogether soupy.

Speaking of soup, Brendan I have to tell you about "white gazpacho": one big container of plain lowfat yogurt, one red onion, 2 cloves of garlic, one jalapeno, one cucumber, one red pepper, one green pepper, and a generous dash or more each of olive oil and especially balsamic vinager. Put it all together in the blender and give it as much time there as you can afford, oooh, it's good.
